A Nourishing Turmeric Lentil Soup Recipe
This golden lentil and sweet potato soup is a warm and nourishing plant-based meal made with red and green lentils, sweet potatoes, turmeric, and fresh herbs. It is simple to prepare, rich in flavor, and full of wholesome ingredients that make it perfect for a healthy lunch or comforting dinner.

Ingredients (2× batch)
2 tablespoons avocado oil
2 cups chopped onion
2 cups chopped celery
2 cups chopped turnip or potato
5 cups chopped sweet potato
4 garlic cloves, minced
2 teaspoons sea salt
2 teaspoons black pepper
4 teaspoons dried thyme
2 cups green or brown lentils
2 cups red lentils
2–4 tablespoons turmeric
2 teaspoons ginger
2 teaspoons cumin
8 cups vegetable broth
4 cups water
2 cups almond milk
2 cups fresh spinach
2 cups fresh herbs (parsley works well)
2 teaspoons lemon juice
1 teaspoon red pepper flakes
Instructions
Heat the avocado oil in a large pot or Dutch oven over medium heat. Add the onion, celery, turnip or potato, sweet potato, and garlic. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
Season with salt, pepper, and dried thyme and cook for another 1–2 minutes to release the flavors.
Add the lentils, turmeric, ginger, and cumin. Stir well, then pour in the vegetable broth and water. Bring the soup to a boil, cover, and reduce to a gentle simmer. Let it cook for about 30 minutes, until the lentils are soft and the soup becomes thick and hearty.
Remove from heat and stir in the almond milk, spinach, fresh herbs, lemon juice, and red pepper flakes. Mix until the spinach wilts.
Serve warm.
